Amuse bouche: pork "arancino"

1st Course: Yellowfin tuna l'occidental, flashed with beurre noisette and crispy shallots

2nd Course: Rhode Island wild striped bass, English pea puree and carrot ribbons with a salad of morels and fried salsify

3rd Course: Poached Violet Hill "Belle Rouge Chicken" with nettle and pine nut mousse, roasted new potatoes, chanterelle mushrooms and sauteed mustard greens

4th Course: Poached cherries over a bittersweet chocolate tart, malted vanilla bean ice cream and smoked almond brittle

5th Course: Hazelnut-milk chocolate mousse with cocoa streusel, salted caramel ice cream and chocolate ganache
